Egg Curry Recipe | How to Make Egg Curry | Anda Curry

Eggs are widely used in Indian cuisine as they are not only delicious but also very healthy.

Loaded with proteins, vitamins and minerals, eggs are a delight to the taste buds.

Healthy and tasty eggs when cooked in Indian masalas, become a true treat to every spicy food lover.

Anda curry is a great option to try when you are tired of the daily scrambled egg bhurji.

Easy to make, this egg curry will soon become your family’s favorite.

Now let’s get started with the recipe:

Preparation Time: 10 Minutes

Cook Time: 30 Minutes

Total Time: 40 Minutes

Serves for 3.

 

Ingredients:

1) 4 Eggs

2) 2 Chopped Onion

3) 1 tsp ginger garlic paste

4) 3 tbsp grated dry coconut

5) 1 cinnamon

6) 2 bay leaves

7) 1 tsp poppy seeds

8) 2-3 cloves

9) 4-5 black paper

10) 4-5 Cashew nuts

11) 1 green cardamom

12) 1 tsp kashmiri red chilly powder

13) 1 tsp turmeric powder

14) 1 tsp garam masala

15) 1 tsp coriander powder

16) 1/2  tsp cumin seeds powder

17) Water as consistency required

18) 4 tblsp Oil

19) 2 tsp Oil for frying eggs

20) Salt to taste

21) Chopped curry leaves

22) 1 lemon for serving (optional)

 

Method:

 

Boil eggs remove their shell. Keep them aside.

Take a pan heat  1/2 tsp of oil, add chopped or sliced onion and saute till translucent.

Add cinnamon, bay leaves, poppy seeds, 2-3 cloves, 4-5 black paper, cashew nuts, green cardamom and saute for 2-3 minutes.

Add grated coconut and saute it until nice brown.

Take away from flame and let it cool down.

Once the mixture cool down take it into a grinder, grind it until smooth paste.

Heat rest of oil, add ginger garlic paste and saute for 2 minutes and pour coconut paste and stir well.

Add all species like red chilly powder, garam masala powder, turmeric powder, coriander powder, cumin powder and saute till the oil separated from masala. The flame should be medium.

The masala will appear nice color.

Add salt and hot water in masala and let it boil.

On the other hand cut eggs into two parts,  heat little oil on tava and fry eggs from both sides.

Add fried eggs into a boiled curry simmer the flame and keep a lid and let it cook for more 10 minutes.

Garnish with chopped coriander.

Serve hot with Rice Bhakri, Plain Rice or Ghadichi Poli or Chapati.
