This Egg Rice is not “Chinese Egg Fried Rice” but an Indian version of it.

Made with Indian spices, rice and boiled egg,  this Anda Rice is tastier than the

fried version.

With the goodness of eggs and taste of spices, this Egg Rice will soon be

everyone’s favourite in your family.

Let the praises pour over the dinner table with this Egg Rice tempting aroma and delicious taste.

So let’s start with the Anda Rice Recipe

 

Preparation Time: 15 Minutes

Cook Time: 30 Minutes

Total Time: 45 Minutes

Serves for 2.

 

Ingredients:

1) 2 Cup Basmati Rice

2) 4 Cup Hot Water

3) 4 Eggs

4) 1 Bay leaf

5) 1 Cinnamon

6) 2-3 Black Paper

7) 1 Green Cardamom

8) 2 Sliced onion

9) 1 tsp Ginger garlic and mint paste

10) 1/2 tsp Cumin powder

11) 1/2 tsp Coriander powder

12) 1 Chopped tomato

13) 2 tsp Yogurt

14) Chopped coriander leaves

15) 4 tsp  Oil

16) Salt as per taste

 

Method:

 

Boil eggs remove their shell. Set them aside.

Wash and soak rice for about 30 minutes, Drain off water. Bring water to a boil. Add little oil and soaked rice.

Prepare rice and keep aside.

Take a pan heat  1/2 tsp of oil, Add cinnamon, bay leaves,  green cardamom, black paper and add  sliced onion and saute till translucent.

Add ginger garlic and mint paste, fry till the raw smell goes off.

Add red chilly powder, biryani masala, cumin seeds powder, coriander powder and give quick stir.

Add yogurt, salt stir and cook.

Cut the boiled eggs into two parts, and add it to the yogurt mixture mix well.

Cook for 5 minutes.

Layer the rice in a pot.

Evenly layer the egg mixture over the rice, spread it.

Layer with rice again.

Cover the pot and cook for 10 minutes on medium heat.

Serve hot with raita or onion.
